We are well into apple season. I am very fortunate to have an almost infinite supply of fresh apples.So far I have made Apple and Ginger Chutney, Apple and Plum Chutney, Apple and Blackberry crisp, plus I have frozen apples. Here is a great recipe for a gluten free Crisp which is my go to favourite. I cannot take credit for this recipe it came from Chef Michael Smith.
Toss 6 apples that have been cored and cut into chunks with 1 tsp ground cardamom, ¼ – ½ c. maple syrup (depending upon your sweet tooth ) and raisins. Pour into an 8” by 8” baking dish. In a separate bowl mix 2 cups of oats (not instant), ½ cup sliced almonds and ½ cup of sunflower seeds together than add some more maple syrup, ¼ – ½ cup, ½ cup vegetable oil and a pinch of salt. Mix well and crumble over apples, letting it clump a bit. Bake for 1 hour at 350 degrees.
