Non Dairy Coffee Creamer

Ingredients:
1/2 cup raw cashews
3 cups water – 1 1/2 cup for soaking, 1 1/2 cups for blending
1/2 to 1 tsp organic vanilla extract
A pinch of salt (optional)
Note: If you’re the only consumer, you can half the recipe.

Directions:
Soak the cashews in water, then cover and allow to sit at room temperature for about 6 hours.
Drain the water and add the cashews, remaining water, and vanilla to a blender. Process until smooth and creamy.
Store in a sealed jar or container in the refrigerator. It will last about 5 days.
Enjoy with either hot or iced coffee!
