Snack Attack

There exists a well-worn debate on what a person should eat directly after a workout.  As well, much discussion is made about WHEN a person should actually eat, let alone WHAT.

The most popular general consensus is that eating post exercise is important. This after-WOD snack will help to restore glycogen. Your muscles are worn out at this point, and need the raw materials to recuperate after you finish exercising. Another thing to consider is that the first nutritional priority after exercise should be to replace any fluid lost during your workout, so replenish yourself with water or your preferred form of hydration as soon as you’re finished. (We’ve talked about this before: Guzzle It Down!) Another thing to consider about your potential post-work out meal is that it should optimally contain some protein, some complex carbohydrates and some healthy fats.

To give your body the refueling that it needs, it can never hurt to have a nice grab n’ go Paleo snack on hand for when you’re coming down from that post-WOD high.  Try these little gems on for size:

Bacon Egg Muffins

Make as many as you want to have on hand. They likely freeze well for a really quick snack or breakfast. Try adding any veggies you have on hand. Gluten and dairy free.

  • Coconut oil (or other oil/ fat)
  • 2 Eggs (or as many as you want)
  • 2 slices of bacon (or as many pieces as eggs)
  • Chopped onions (about 2 Tbsp)
  • Chopped sun dried tomatoes (about 2 Tbsp)

Preheat oven to 350 degree. Put a small amount of coconut oil into ramekins or muffin tins and place in the oven until melted. Spread around to coat the bottom and sides of the ramekin.

Loop one slice of bacon around the sides of the ramekin to form a circle.

Fill the bottom with chopped veggies.

Gently crack one egg into the center of the ramekin.

Bake for about 15-20 minutes until the egg is white and set. Let sit and using a knife gently remove the bacon egg cup from the ramekin and enjoy! Store in fridge or freezer and reheat in oven or microwave.
