Paleo Recipe – Strawberry Rhubarb Crisp

Stacey’s Strawberry Rhubarb Crisp

Base:

  • 6 cups rhubarb chopped
  • 2 cups strawberries sliced
  • 2t vanilla
  • 2T arrowroot powder
  • 1/2 cup honey, warm if necessary to mix easier
Stir together in 9×9 baking dish.
Topping:
  • 2 cups almond flour
  • 1/2 cup shredded coconut
  • 1t cinnamon
  • 1 cup chopped nuts almond, pecan walnuts or all three
  • 1/2 cup maple syrup, or more as needed until it’s crumby
Put topping on base and bake at 350 until edges bubble approx 40 minute. Serve warm.

This is a partner workout – partners will be randomly selected and your combined time to complete the workout will be your score.  Partners can be from different zones – make sure you scale to your ability. Each partner must row the following distances.  You will alternate with no rest starting with the 1000m row (partner 1 rows 1000m, then partner 2 rows 1000m, then partner 1 rows 750m and so on)…

Elite – row 1000, 750, 500, 250m

Zone 2 – row 850, 650, 450, 250m

Zone 1 – scale row as needed
