Stacey’s Strawberry Rhubarb Crisp

Base:

6 cups rhubarb chopped

2 cups strawberries sliced

2t vanilla
-
2T arrowroot powder
-
1/2 cup honey, warm if necessary to mix easier
Stir together in 9×9 baking dish.
Topping:
- 2 cups almond flour
- 1/2 cup shredded coconut
- 1t cinnamon
- 1 cup chopped nuts almond, pecan walnuts or all three
- 1/2 cup maple syrup, or more as needed until it’s crumby
Put topping on base and bake at 350 until edges bubble approx 40 minute. Serve warm.

You will alternate with no rest starting with the 1000m row (partner 1 rows 1000m, then partner 2 rows 1000m, then partner 1 rows 750m and so on)…
Elite – row 1000, 750, 500, 250m
Zone 2 – row 850, 650, 450, 250m
Zone 1 – scale row as needed
